Seared Scallops with Simple Greens in Lemon Vinaigrette Recipe


Ingredients

  • 1lb Scallops
  • 1 T evoo
  • 1/2 cup white wine
  • 1 T butter
  • 2 cups fresh mixed greens salt and pepper to taste

Directions

1. Dry Scallops well with paper towel and season with salt and pepper to taste.

2. Heat a skillet until almost smoking.

3. Add 1 T evoo and sear scallops until golden brown (if your pan was hot enough this should take 3 minutes).

4. Flip and cook 2 minutes more on the other side.

5. Remove scallops from pan and add 1/2 cup white wine.

6. Simmer until reduced (3-4 minutes) and stir in 1 Tablespoon of butter.

7. Add scallops back to pan to cover in sauce.

Ingredients For Dressing:

  • 2 T finely chopped shallots
  • 2 T Dijon Mustard
  • 4 T Lemon Juice
  • 1 T honey or agave syrup
  • 4 T evoo
  • Salt and pepper to taste

Directions

1. Whisk together until emulsified

2. Drizzle over mixed greens and top with scallops
